We're in Bilbao in the Pais Vasco, which can only mean one thing... Pintxos! A classic "Gilda" is a skewer with olives, pickled guindilla chillis and anchovies. This morsel was named after the 1946 Rita Hayworth film of the same name. But this being the Basque Country, they come in a multitude of delicious variations - and we managed to find a bar serving nothing else!

We happened across the old Ortiz anchovy-packing house on the quayside in San Vicente de la Barquera (Cantabria) - hasn't been used for some years - but a brand and business that still means the very best quality - and used by us in the restaurant. An impromptu lunch of razorclams, rabas and salad, followed by a long beach walk - note to self - make sure we return with surfboards in the future - great waves!

If you're gonna serve Asturian sidra for lunch, better make sure you've got a few bottles open. Comes in bottles or barrels...

Another day, another long lunch... We're in Oviedo, the capital of Asturias (northern Spain), so it has to be 'fabada', followed by sizzling chuletón steak. Much discussion about whether the fabada was as good as Giselle's (we decided it was a close 2nd). Washed down with gallons of still cider. Off trouser shopping tomorrow for a size bigger...

The influences of the Romans and Moors are just as present in the gastronomy of Castile as elsewhere in Spain. How could we pass through Segovia without sitting down to 'Cochinillo' roast suckling pig - with paper-thin crackling, roasted in a wood-fired oven by the 'maestro asadores' at @restauranteelbernadino, followed by Ponche Segoviano, a marzipan-covered cream and sponge confection, as light as can be. It was a relatively short lunch of about 3 hours... 🙄

Exploring the streets of Segovia got us thinking about what is "Spanish"? The doorways we pass seem to hold a bit of the answer - Phoenician, Roman, Jewish, Moorish, Mudejar, Castillian... a rich melting pot that is so much on display in many many parts of Spain. Even English perhaps after we discover Eleanor of England (daughter of Henry II) married Alfonso VIII and became Queen of Castile here in the castle in Segovia. Who knew!?

The royal palace La Granja de San Ildefonso was modelled on Versailles and sits nestled in the mountains close to Segovia in Castilla y León. Today, as the snow flurries began, on the 'Day of the Kings' (Epiphany), it was deserted and we had the 1,500 acre gardens to ourselves. Next stop Segovia...

Day 1 of our New Year's road trip through central and northern Spain kicked off with a breakfast of kings - tortilla sandwich, churros and choc - while visiting some old hang outs in the Guadarrama sierra. Catching up with some old friends before Reyes (epiphany) celebrations tomorrow in Escorial. It's great to be back exploring again ☺️

Yesterday we took time out from our "busy schedule" to visit the 9th Mogán Avocado Festival! Who knew such a thing existed? Needless to say, we have never seen so many varieties and such enormous avos... And they tasted pretty good too 😋

Today we spent the morning in the cavernous Atarazanas market, sampling some amazing produce, marvelling at the abundant seafood, beautiful wild fungi, and so much more. It has been such a pleasure spending time with the team outside of work. Tomorrow we go our separate ways. Some to Granada, some to the UK, some to Michelin-starred kitchens up the coast... but all taking great memories with us of our time together here.

Day 3 in Málaga with our amazing team. Learning the difference between churros and porras; discovering the province's sweet wines at the heaving 'Antigua Casa de Guardia' bar; and dining at the Málaga institution that is El Pimpi, among the many highlights of the day.

We were recently introduced to Alasdair from @theoldways.farm near Bridport - and what an introduction! We love our eggs at Strawberry Tree - we make fresh mayonnaise every day, as well as using eggs in our tapas, cakes and, of course, for breadcrumbing our croquetas and crispy aubergines every day. We use about 150 eggs every week. At The Old Ways Farm, just down the road from us in Symondsbury, Alasdair practices regenerative farming, using high-welfare systems that mimic nature and improve biodiversity and soil health. After the success of our “Summer Nights at The Town Mill” last month we are marking the end of summer with a “Summer Sunday” chill-out event in the courtyard and garden at Strawberry Tree. We have an amazing opportunity for someone to join our kitchen team.   We are looking for a key new kitchen team member to work closely with Giselle, a passionate chef with 40 years’ experience. Your tasks will include food preparation, ordering from suppliers, supporting tasks during lunch and/or evening service, as well as all those smaller jobs that make a successful, commercial kitchen run smoothly. You will learn first-hand about our food from Giselle and have a unique opportunity to develop your knowledge of and experience cooking Spanish and North African cuisine. Catering experience is useful but not essential for the role as training will be provided. What we do need is someone with bags of initiative, a desire to learn, good attention to detail, capable of working alone on set tasks but also as a key member of the team. The role would equally suit a young person, or someone with life experience. Natural curiosity and a passion for food is obligatory! Crossing continents... As we wave goodbye to North Africa, so the unmistakable silhouette of the 'Rock' looms into view. Gibraltar - the 'End of Europe' - is Giselle's family home and a true melting pot of cultures, food, religions. In many ways it is the spiritual home of Strawberry Tree too.

This morning we wandered the old medina in Tangier to buy some Ras el hanout for the restaurant from a merchant called Youssef 👳‍♀️. He paced his stall, basket in hand, carefully picking out handfuls of spices to blend. The mix differs from stall to stall, but his included five types of peppercorn, rose petals, dried saffron and galangal, aniseed, turmeric, mace... more than 22 in total, freshly ground to order. Can't wait to get our mix back to our kitchen...

Today we drove over to Tetouan and through the mountains up to the 'blue city' of Chefchaouen - famous for its blue colour and after 1471, home to the Moors fleeing Andalusia and Granada - very much tied with Giselle's heritage. Lunch included a beautiful chicken pastilla, candied carrots and stewed pumpkin with cinnamon. Inspiration all round 😋
